Pancakes in a Mug

Ingredients

  • 1/2 cup All Purpose Flour
  • 1 tsp Baking Powder
  • 2 tsp Sugar
  • 1 tbsp Butter melted
  • 6 tbsp Milk
  • 1/2 tsp Vanilla Extract

Instructions

  • Lightly spray a microwave-safe mug with cooking spray. (I like to use an 8 oz coffee mug but any large mug will do.) This will make clean up easier.  
  • Add the flour, baking powder and sugar to the mug and use a fork to whisk together these dry ingredients. 
  • Add the liquid ingredients: melted butter, milk, and vanilla. Whisk together all the ingredients with a fork until most of the lumps are gone. The pancake batter may just have a few small lumps. Use a small spatula to scrape down the sides of the mug to make sure you get all the pockets of dry ingredients clinging to the inside of the mug. You may want to put paper towels under the mug as you cook it, as it may drip over the sides a little.  
  • Microwave pancake for 1 minute, 20 seconds on medium heat. (Individual results depends on the wattage of your microwave oven - if the pancake is not cooked, try another 10 seconds.)
  • Garnish! Top off you pancake with a slab of butter, syrup and fresh berries and enjoy your fluffy pancake!

Storage Notes:

These microwave pancakes are much better eaten warm! And because they are such a small portion, you won't really have any leftover! I would recommend just making another quick batch the next time you are planning to make them instead of trying to store and reheat leftovers.
FAQ's:
  • Can’t I just use pancake mix to make a pancake mug cake? Yes, you could use about ¼ cup of pancake mix and add 2 or 3 Tablespoons of milk or water. (If you feel the batter is too thick, add a little more liquid.) 
  • I want to serve this easy breakfast to my family - could I make a larger batch? Yes, you could make up a bigger batch (for 4 people you would multiply each of the ingredients by 4) and then spoon pancake mix into the mugs. You will have a delicious breakfast for your family in a matter of minutes!
  • What are some flavors I could add to this mug pancake recipe? I think that the best part of this recipe is how versatile it can be without spending a lot of time! You could throw a dash of cinnamon or a little lemon zest into the batter before cooking. Or, after baking, add a handful of chocolate chips, or a handful of blueberries (or other fresh fruit). (I find that the mug pancake has the nicest texture if you just cook it plain and add in the chocolate chips or blueberries after cooking, but you are welcome to try it either way.)
