Ingredients

Meatloaf

  • 1 Egg
  • 1 cup Water
  • 1 1/2 lbs Ground Beef
  • 6 oz Stove Top Stuffing 1 package
  • 1/2 cup Ketchup
  • 1 tsp Seasoning Salt
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1/2 tsp Pepper
  • Bell Peppers, optional diced and pre-baked, 5 minutes

Glaze

  • 1/2 cup Brown Sugar
  • 1/2 cup Ketchup

Instructions

  • Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan. If you're using bell peppers, slice them in half and remove the seeds. Bake them in the preheated oven for 5 minutes to soften.
  • In a large bowl, whisk together the egg and water. Add in the ground beef, Stove Top Stuffing mix, seasoning salt, garlic powder, onion powder, and pepper. Use your hands to gently mix the ingredients until well combined. Be careful not to overmix, as this can lead to a dense and tough meatloaf.
  • Press the meat mixture into the prepared loaf pan, ensuring it's evenly distributed. If you're using bell peppers, place the softened pepper halves on top of the meatloaf, cut side up, and press them gently into the meat mixture.
  • In a small bowl, combine the ketchup and brown sugar to create a sweet and tangy glaze. Spread the glaze evenly over the top of the meatloaf, and if using, over the bell peppers as well.
  • Bake the meatloaf in the preheated oven for 55 minutes or until the internal temperature reaches 160°F (70°C) when measured with a meat thermometer.
  • Remove the meatloaf from the oven and let it rest for 5-10 minutes before slicing and serving. This will allow the juices to redistribute and result in a juicier, more tender meatloaf.
