Homemade Butterbeer

Ingredients

  • 1 cup heavy cream
  • 3 Tablespoons powdered sugar
  • 2 liter bottle Cream Soda well chilled
  • 5 Tablespoons Butterscotch topping
  • 2 Tablespoons butter extract
  • cup butterscotch topping

Instructions

  • Beat the heavy cream and powdered sugar together until soft peaks form, then keep beating until you get a fluffy texture like pictured. Set this whipped cream aside.
  • Make sure the Cream Soda is well chilled before starting. Pour about 1 cup into a large pitcher or punch bowl.
  • Whisk in 5 Tablespoons of butterscotch topping and 2 Tablespoons of butter extract.
  • Once this is well mixed, gradually stir in the remaining Cream Soda.
  • Scoop the whipped cream on top in large dollops then drizzle on the butterscotch topping.

Notes

  1. This can become an adult beverage, see my tips above.
  2. You can easily double this batch to serve more people, I would use a large punch bowl.
  3. If you really love butterscotch you can flavor your whipped topping by adding 1/4 cup butterscotch topping and omitting the powdered sugar (it would make it overly sweet).
  4. If you can't find butterscotch topping, you can replace with caramel topping instead.
  5. You can use store bought whipped topping instead of making homemade if you are in a rush.
