Hawaiian Roll Breakfast Sliders

These Hawaiian Roll Breakfast Sliders are so good I could have them for breakfast(and lunch, possibly dinner too!) every day if possible! Who can possibly resist layers of ground pork sausage, fluffy eggs, melty cheese, and crispy bacon crumbles sandwiched between soft Hawaiian rolls?

Ingredients

  • 20 ounces pork sausage
  • 8 slices bacon
  • 8 medium eggs
  • ¼ cup milk
  • 1 Tablespoon chives
  • ¼ teaspoon pepper
  • 12 pieces dinner rolls
  • 3 cups cheddar cheese shredded , divided
  • 5 Tablespoons salted butter divided
  • 2 Tablespoons maple syrup

Instructions

  • Preheat the oven to 350 degrees.
  • Squeeze the pork sausage onto a 9X13 inch baking pan and form it into a rectangle a little larger than the size of your dinner rolls rectangle. It will shrink down while cooking. Bake this for 25 minutes or until cooked through.
  • While this is cooking, line a baking sheet with parchment paper and lay the strips of bacon on the sheet. Bake this for 10 minutes or until crispy.
  • Whisk the eggs together with the milk, chives, and pepper. Melt 1 Tablespoon of the butter in a skillet and pour in the egg mixture. Stir often until the eggs are just cooked (about 5 minutes).
  • Keep the dinner rolls attached in one block. Slice through the whole block. Place the bottom of the buns onto a 9X13 baking pan or glass dish. Set the tops aside.
  • When the sausage, bacon, and eggs are cooked, we can begin assembly.
  • Sprinkle 2 cups of shredded cheese evenly over the bottom buns.
  • Place the sausage (as one large block if possible) onto the cheese layer.
  • Place the scrambled eggs over the sausage. Crumble the bacon and sprinkle this over the eggs. Sprinkle the remaining cheese over the bacon.
  • Place the block of bun tops over the layer of cheese.
  • Melt the remaining 4 Tablespoons of butter and stir in the 2 Tablespoons of maple syrup.
  • Brush this mixture over the buns.
  • Bake the sliders for 10-15 minutes or until the tops are golden.

Notes

Storage Instructions
In the unlikely case that you have leftovers, they should be wrapped well using foil or plastic wrap and maybe kept refrigerated for up to 5 days. You can make them ahead, place the individual sliders in a freezer bag, and keep them frozen for 2 months. From frozen would only take about a minute to reheat nicely. If they are refrigerated, they should be heated through in about 30 seconds.

  1. Do I have to brush the top buns with maple syrup and butter? It makes the tops crisp and adds a rich sweetness to the sandwich, but you can skip this step entirely. Or use egg wash instead.
  2. Can I add mayonnaise, mustard, or other sauce? Yes, if you prefer to, that is absolutely fine. Take note that using them can make the rolls soggy though.
  3. Could I just bake the eggs in the oven too, instead of heating up the stove? Yes, prepare a 9X9 baking dish by rubbing the Tablespoon of butter all over the bottom and up the sides. Whisk the eggs together with the milk, chives, and pepper then pour this mixture into the baking dish. They may go into the 350 degree oven (along with the sausage) but will only need to bake for up to 10 minutes. Take them out as soon as they are set.
  4. I feel like bacon and sausage is going to be too much meat in a meal - could I leave one out? Yes, that really is up to your preference.
  5. Can I use sausage patties instead of ground pork sausage? Yes, I would cook the patties and then try to place them evenly in a layer over the cheese. I like using ground pork sausage cooked in a block because then there are no spaces. You could also scramble fry sausage on the stove and then sprinkle it over the cheese.
  6. Should I add salt to the eggs? I find that there is enough salt in the butter, sausage and bacon that it is not necessary to add any salt to the recipe. I’d recommend cooking it this way first, and then having salt available while serving if people would like to add more.
  7. Could I make these up the night before? Yes! I would recommend fully assembling them and then placing the tray of sliders into the fridge. Then, you may bake them in the morning and they will be as good as fresh!
