Buddy the Elf Charcuterie Board

Ingredients

  • 2 cups Broccoli florets
  • 16 ounces Cheddar Cheese cubed
  • 1/2 Bell Pepper red
  • 1 English Cucumber sliced, then cut in half
  • Christmas Snacks to fill the board with

Instructions

  • Rinse your Broccoli, Cucumbers and Red Bell Pepper. Make sure to pat Dry
  • Cut the stems off all the Broccoli to make florets. Make sure to cut them close to the base so they will sit flat on the board. Set aside
  • Cut the Cumbers. Slice them about a 1/4 of an inch wide and try to keep them a consistent width. Then cut the round slices in half and set aside.
  • Cut your Bell Peppers. Cut the top off the bell pepper and remove the seeds and membrane. Then slice them horizontally from top to bottom about 1/4 of an inch wide. Set these aside.
  • Assemble your Charcuterie Board. You want it to end up looking like Buddy the Elf's hat so we are going to start with the base then create a triangle shape!
  • Broccoli: Start at the base of the board and lay out your florets about 3 inches wide.
  • Cheese Cubes: Place about 3 rows of cheese cubes above the broccoli (building towards the top of the board) then stack three rows on top of the bottom layers of cheese.
  • Cucumbers: This part can be a little tedious so be patient. Turn your cut cucumber slices to where the peel is face up and layer them in a triangular pattern until you come to a point. I recommend starting with larger slices of the cucumber and ending with the smallest ones
  • Red Bell Pepper: Once the hat is mostly assembled, you will finish with Buddy's signature red feather. Just place the slices in a feather pattern on the cheese! Use the curved pieces of the bell pepper to help you make the shape!
  • Finishing Touches: Now that your hat is finished you can fill in the rest of the charcuterie board! Add a small bowl of ranch (or your favorite vegetable dip) for dipping. Then fill in with some of your favorite Christmas snacks! I recommend things like: popcorn, carrots, cookies, pretzels, marshmallows, fruit, candy canes, Christmas Candy...whatever you like, they sky's the limit!
