Taco Roll Ups

Ingredients

  • 16 oz Cream Cheese 2 blocks, softened
  • 1 oz Taco Seasoning 1 packet
  • 10 oz Rotel 1 can
  • 2 cups Chicken cooked and shredded
  • 10 Tortillas large
  • 2 cups Cheese Fiesta Blend, shredded

Instructions

  • In a large bowl, beat the softened cream cheese until it becomes smooth and creamy. This will make the mixture easier to spread on the tortillas.
  • Stir in the taco seasoning until it is fully incorporated into the cream cheese.
  • Add the drained can of Rotel to the bowl, mixing well. Ensure the tomatoes and chilies are evenly distributed throughout the cream cheese mixture.
  • Stir in the shredded chicken, mixing until everything is well combined.
  • Spread approximately 1/10th of the mixture evenly over each tortilla, covering as much of the surface as possible but leaving a small margin around the edges to prevent the filling from spilling out.
  • Sprinkle a layer of the Fiesta Cheese Blend over the cream cheese and chicken mixture on each tortilla.
  • Starting from one edge, tightly roll each tortilla into a log shape. Be careful not to squeeze too hard or the filling may spill out.
  • Once all the tortillas are rolled up, wrap them individually in plastic wrap or aluminum foil.
  • Place the wrapped roll ups in the refrigerator for at least 2 hours, or until firm. This step is important because it helps the roll ups hold their shape when cut.
  • Once the roll ups are firm, unwrap them and using a sharp knife, cut them into 1-inch slices. Arrange the slices on a serving tray, with the spiral pattern visible.
