Ingredients

  • 2 cups Rotini Pasta
  • 2 cups Cooked Chicken shredded or cubed
  • 4 cups Romaine Lettuce chopped
  • 1 cup Bacon cooked & chopped
  • 1 cup Parmesan Cheese grated
  • 1 cup Caesar Dressing more or less to taste
  • 1 cup Croutons

Instructions

  • Cook the Pasta: Bring a large pot of salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente. Once cooked, drain the pasta and rinse under cold water to cool. Set aside.
  • Prepare the Chicken: If you haven't already, cook your chicken. You can grill, bake, or use leftover rotisserie chicken. Once cooked, let it cool slightly, then shred or cut into bite-sized pieces.
  • Cook the Bacon: If not already done, cook the bacon until crispy. Once cooked, transfer to a paper towel-lined plate to drain and cool, then chop into pieces.
  • Mix the Salad: In a large bowl, combine the cooled pasta, chopped Romaine lettuce, shredded chicken, and chopped bacon. Pour the Caesar dressing over the salad mixture. Add the grated Parmesan cheese. Toss everything together until well combined. Adjust the amount of dressing to your liking.
  • Final Touches: Just before serving, add the croutons and give the salad a gentle toss to mix them in. This keeps them crispy.
  • Serve: Serve the salad immediately, garnished with a bit more Parmesan cheese on top, if desired. If you're not serving it right away, keep the croutons separate and add them just before serving to maintain their crunch.

Notes

Storage and Reheating Instructions

This salad is best enjoyed fresh, but if you find yourself with leftovers, store them in an airtight container in the fridge. It should keep for about 2-3 days. For the best experience, keep croutons separate to avoid sogginess.

Helpful Tips & Substitutions

Can This Be Made Ahead of Time?

Absolutely! You can prepare the pasta, chicken, and bacon ahead of time. Store them separately in the fridge and assemble the salad just before serving. Remember, add the croutons last to keep them crispy.

Substitutions & Variations

  • Pasta: Feel free to use any pasta shape you like. Bowties or penne are great alternatives.
  • Protein: Not a fan of chicken? Swap it out for shrimp or tofu for a delightful twist.
  • Veggies: Add cherry tomatoes, cucumbers, or avocado for an extra burst of freshness.

Helpful Cooking Notes

  • Pasta Tip: To keep your pasta from sticking together, add a little olive oil to the water as it cooks.
  • Chicken Hack: For extra flavorful chicken, marinate it in some Caesar dressing before cooking.
  • Bacon Bits: For a quicker option, pre-cooked bacon bits can be used in place of fresh bacon.
