Ingredients
2cups flourplus a little extra for the counter and rolling pin
1tbspbaking powder
¼tspbaking soda
½tspsalt
7tbspsalted buttercubed and chilled in freezer
¾cupbuttermilkcold (plus a couple of Tablespoons for brushing on just before baking)
Instructions
Preheat the oven to 400 degrees. Use parchment paper and line a baking sheet.
Pulse the baking powder, baking soda, salt, and flour with a food processor. Add in the cold butter and pulse to create a crumbly mixture.
Add the buttermilk and pulse until just mixed - don't overmix.
Add flour to the countertop surface and place the dough on the counter. Add some extra flour to the surface of your rolling pin and roll the dough out into a rectangular shape.
Once the dough is rolled out, fold 1/3 of the dough over onto itself. Then take the opposite side of the dough and fold 1/3 of it into it. (It will look like you're folding a letter.)
Press the dough into a rectangle shape, which should be about 1/2 inch thick or so. Use a cookie cutter (2 1/2 inches in round size) and cut out the biscuits. Place them on the baking sheet.
Use the dough scraps and press them out to 1/2 inch thickness. Cut out more biscuits and place them on the baking sheet. Repeat this process until all the dough is used.
Use a pastry brush and brush the tops of the biscuits with buttermilk.
Put the biscuits in the oven and bake for 12-15 minutes.
Notes
Storage: To store leftover biscuits, wrap them in plastic wrap and store them in the fridge for up to 5 days. You can also store them at room temperature, too. If you want frozen biscuits, freeze them for up to 3 months.
