Ingredients

  • 2 cups Fresh Strawberries
  • 1 cup Plain Greek Yogurt
  • 1 tablespoon Honey
  • 1 teaspoon Vanilla Extract
  • 4 cups Semi Sweet Chocolate
  • 3 tablespoons Coconut Oil
  • Sea Salt

Instructions

  • Prepare Strawberries: Wash and hull the strawberries. Dice them into small bite sized pieces.
  • Mix Yogurt: In a bowl, combine the diced strawberries, Greek yogurt, honey, and vanilla extract. Stir well until the mixture is smooth and fully combined.
  • Freeze: Scoop out spoonfuls of the strawberry yogurt filling onto a baking sheet lined with parchment paper, about 2 tablespoons each depending on your liking, creating little individual mounds. Place them in the freezer for 2 hours to fully freeze and harden.
  • Melt Chocolate: When the yogurt bites are frozen, melt the chocolate. (leave them in the freezer while heating the chocolate) To a microwave-safe bowl, add the semi-sweet chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until the chocolate is fully melted and smooth.
  • Coat in Chocolate: Take the frozen yogurt and strawberry bites out of the freezer. Spoon a layer of melted chocolate over each bite, ensuring the strawberry and yogurt are completely coated and place them back on the parchment lined baking sheet. Sprinkle a tiny pinch of sea salt on top of the chocolate layer for a flavor enhancement.Freeze Again: Place the bites back in the freezer and freeze for another 15-20 minutes or until the chocolate is solid and the bites are completely frozen.
  • Special Notes: These can be a bit messy so work quickly and in batches if you need to, leave half in the freezer as you work on the first batch. Make sure to reheat the chocolate as you work in case it begins to harden as you coat. Don’t make them too big because they are very decadent and have a thick coating of chocolate, bite sized it best!
