Ingredients

  • 12 Lasagna Noodles cooked according to package instructions
  • 1 cup Ricotta Cheese
  • 1 cup Mozzarella Cheese shredded
  • 1/2 cup Parmesan cheese grated
  • 1 Egg large
  • 1 cup Marinara Sauce
  • 1/2 lb Ground Beef cooked and crumbled (can use Italian Sausage instead)
  • 2 tsp Garlic minced
  • 2 tbsp Basil fresh, chopped
  • 1 tsp Italian Seasonings
  • Salt and Pepper to taste
  • 1/2 cup Mozzarella Cheese shredded

Instructions

  • Preheat your oven to 375°F.
  • Cook the lasagna noodles according to package instructions until they are al dente. Drain them and lay them out on a clean kitchen towel to prevent them from sticking.
  • In a mixing bowl, combine the ricotta cheese, 1 cup shredded mozzarella cheese, grated Parmesan cheese, egg, minced garlic, chopped basil, italian spices, salt, and pepper. Mix until everything is well incorporated. If using meat, fold in the cooked and crumbled ground beef or Italian sausage.
  • Spread about 1 cup of marinara sauce on the bottom of a 9x13 inch baking dish. Take one lasagna noodle at a time, spread about 2-3 tablespoons of the cheese mixture evenly over the noodle. Starting from one end, roll the noodle up tightly. Place the rolled noodle seam-side down in the baking dish. Repeat with the remaining noodles.
  • Pour the remaining 1 cup of marinara sauce over the top of the lasagna roll-ups.Sprinkle the 1/2 cup of grated mozzarella cheese over the top. Cover the baking dish with aluminum foil. Bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 5 minutes, or until the cheese is bubbly and slightly golden.
  • Allow the lasagna roll-ups to cool for a few minutes before serving. Garnish with additional chopped fresh basil.

Reheating and Storage Information

If you're like me, you sometimes make too much food (oops!), or maybe you just love planning ahead. Either way, these lasagna rolls have got you covered:
  • Storing: Once cooled, place any leftover roll-ups in an airtight container. They'll stay fresh in the refrigerator for up to 3 days.
  • Reheating: Pop the desired number of roll-ups in a microwave-safe dish, cover, and heat until they're piping hot. Alternatively, reheat them in a preheated oven at 350°F for about 15 minutes or until they're warmed through. Remember, cheesy perfection is worth the wait!

Substitutions & Variations

Got a creative flair? Or perhaps there’s an ingredient that you're not so fond of? No worries! Let’s mix things up:
  • Cheese Lovers: Swap out ricotta for cottage cheese or even a mix of your favorite cheeses. The cheesier, the better, right?
  • Veggie Delight: If meat isn't your thing, replace the beef or sausage with your favorite veggies like spinach, mushrooms, or bell peppers. Healthy and delicious – win-win!
  • Spice it Up: Feeling adventurous? Add a pinch of chili flakes to your marinara sauce for a little kick. Life's too short for bland food!

Helpful Cooking Notes

Ah, the little nuggets of wisdom to ensure that your lasagna rolls come out just perfect:
  • Noodle Care: When you’re laying out the cooked lasagna noodles, make sure they don't overlap. We don’t want any noodle-on-noodle crime happening here.
  • Spread the Love: Be generous but even when spreading the cheese mixture on the noodles. This ensures a uniform taste in every roll.
  • Foil is Your Friend: Always remember to cover your baking dish with aluminum foil while baking. It helps cook the roll-ups evenly without drying them out.
