Preheat your oven to 375°F.
Cook the lasagna noodles according to package instructions until they are al dente. Drain them and lay them out on a clean kitchen towel to prevent them from sticking.
In a mixing bowl, combine the ricotta cheese, 1 cup shredded mozzarella cheese, grated Parmesan cheese, egg, minced garlic, chopped basil, italian spices, salt, and pepper. Mix until everything is well incorporated. If using meat, fold in the cooked and crumbled ground beef or Italian sausage.
Spread about 1 cup of marinara sauce on the bottom of a 9x13 inch baking dish. Take one lasagna noodle at a time, spread about 2-3 tablespoons of the cheese mixture evenly over the noodle. Starting from one end, roll the noodle up tightly. Place the rolled noodle seam-side down in the baking dish. Repeat with the remaining noodles.
Pour the remaining 1 cup of marinara sauce over the top of the lasagna roll-ups.Sprinkle the 1/2 cup of grated mozzarella cheese over the top. Cover the baking dish with aluminum foil. Bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 5 minutes, or until the cheese is bubbly and slightly golden.
Allow the lasagna roll-ups to cool for a few minutes before serving. Garnish with additional chopped fresh basil.
