- 1 tbsp olive oil
- 1 white onion diced
- 1 lb ground beef
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 1/2 cups beef broth
- 1 cup salsa
- 1 pkg taco seasoning
- 1 tsp garlic powder
- 3 cups dry pasta shells
- 4 oz cream cheese
- 3 cups cheese shredded and divided

Using a Dutch oven, heat olive oil over medium-high heat. Fry the onion until soft, then add ground beef, salt, and pepper. Use a wooden spoon to break up the beef as it cooks. Once cooked, drain the fat out of the pan.
Stir in the broth, salsa, taco seasoning, garlic powder, and pasta. Place the lid on the Dutch oven and cook on low heat for 15 minutes, stirring every 5 minutes. If there is still liquid in the pot after 15 minutes, remove the lid, and continue to cook until the liquid evaporates.
Remove from the heat and add cream cheese and 2 cups of shredded cheese. Stir until the cheese is completely melted and everything is combined.
When ready to serve, sprinkle the remaining cheese on top of the Taco Mac and Cheese, and serve with your favorite toppings.
