Taco Mac and Cheese

Ingredients

  • 1 tbsp olive oil
  • 1 white onion diced
  • 1 lb ground beef
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 1/2 cups beef broth
  • 1 cup salsa
  • 1 pkg taco seasoning
  • 1 tsp garlic powder
  • 3 cups dry pasta shells
  • 4 oz cream cheese
  • 3 cups cheese shredded and divided

  • crushed corn chips
  • green onions
  • diced tomato
  • avocado

Instructions

  • Using a Dutch oven, heat olive oil over medium-high heat. Fry the onion until soft, then add ground beef, salt, and pepper. Use a wooden spoon to break up the beef as it cooks. Once cooked, drain the fat out of the pan. 
  • Stir in the broth, salsa, taco seasoning, garlic powder, and pasta. Place the lid on the Dutch oven and cook on low heat for 15 minutes, stirring every 5 minutes. If there is still liquid in the pot after 15 minutes, remove the lid, and continue to cook until the liquid evaporates.
  • Remove from the heat and add cream cheese and 2 cups of shredded cheese. Stir until the cheese is completely melted and everything is combined.
  • When ready to serve, sprinkle the remaining cheese on top of the Taco Mac and Cheese, and serve with your favorite toppings.

Notes

  • This a quick and easy one-pot meal!
  • Swap out ground beef for ground chicken, ground turkey, or ground pork. 
  • If you want to make this dish spicy, use spicy salsa, or add jalapenos, cayenne, or hot sauce.
