Strawberry Cheesecake Quesadilla

Equipment

Ingredients

  • 1/2 cup Cream Cheese softened
  • 2 tbsp Sugar
  • 1/2 tsp Vanilla Extract
  • 1/2 cup Strawberries diced
  • 4 Tortillas 6 inch
  • 2 tbsp Butter softened
  • 1 tsp Sugar
  • 1/2 tsp Cinnamon

Instructions

  • Add the softened cream cheese, sugar and vanilla to a mixing bowl and beat together until smooth.
  • Dice strawberries and add them to the bowl, gently fold them in until combined.
  • Spread half of the strawberry cream cheese mixture on a tortilla.
  • Next, add 1 teaspoon of butter to a pan and heat to medium high. When the butter is melted, lay the tortilla in the pan, cream cheese side up.
  • Spread 1 additional tsp of butter on the second tortilla and lay on top of the cream cheese, butter side up.
  • Cook both sides for 2-3 minutes each or until crispy.
  • Mix together the cinnamon and sugar and sprinkle on top of the finished cheesecakeadilla.
  • Repeat for the second quesadilla (or use a griddle to make them at the same time).
  • Remove from heat and let sit for 2 minutes, then slice and serve with strawberry sauce.
