🍓Ingredients
- ½ cup of cream cheese, softened
- 2 Tablespoons sugar
- ½ teaspoon vanilla extract
- ½ cup diced strawberries
- 4 (6 inch) tortillas
- 2 Tablespoons butter, softened
- 1 teaspoon sugar
- ½ teaspoon cinnamon
- Strawberry sauce for dipping

How to make Strawberry Cheesecake Quesadillas
- Add the softened cream cheese, sugar and vanilla to a mixing bowl and beat together until smooth.
- Dice strawberries and add them to the bowl, gently fold them in until combined.
- Spread half of the strawberry cream cheese mixture on a tortilla.
- Next, add 1 teaspoon of butter to a pan and heat to medium high. When the butter is melted, lay the tortilla in the pan, cream cheese side up.
- Spread 1 additional tsp of butter on the second tortilla and lay on top of the cream cheese, butter side.
- Cook both sides for 2-3 minutes each or until crispy.
- Mix together the cinnamon and sugar and sprinkle on top of the finished cheesecakeadilla.
- Repeat for the second quesadilla (or use a griddle to make them at the same time).
- Remove from heat and let sit for 2 minutes, then slice and serve with strawberry sauce.
