Strawberry Cheesecake Quesadillas

Have you ever found yourself craving both a fruity dessert and a crispy quesadilla? If you’re anything like me, you’ve probably wondered if there’s a way to combine these two seemingly disparate food favorites into one mouthwatering treat.

Well, wonder no more! I’m excited to share with you the delightful fusion of flavors that I call “Strawberry Cheesecakeadillas”.

🍓Ingredients

  • ½ cup of cream cheese, softened
  • 2 Tablespoons sugar
  • ½ teaspoon vanilla extract
  • ½ cup diced strawberries
  • 4 (6 inch) tortillas
  • 2 Tablespoons butter, softened
  • 1 teaspoon sugar
  • ½ teaspoon cinnamon
  • Strawberry sauce for dipping

How to make Strawberry Cheesecake Quesadillas

  1. Add the softened cream cheese, sugar and vanilla to a mixing bowl and beat together until smooth.
  2. Dice strawberries and add them to the bowl, gently fold them in until combined. 
  3. Spread half of the strawberry cream cheese mixture on a tortilla.
  4. Next, add 1 teaspoon of butter to a pan and heat to medium high. When the butter is melted, lay the tortilla in the pan, cream cheese side up.
  5. Spread 1 additional tsp of butter on the second tortilla and lay on top of the cream cheese, butter side.
  6. Cook both sides for 2-3 minutes each or until crispy.
  7. Mix together the cinnamon and sugar and sprinkle on top of the finished cheesecakeadilla. 
  8. Repeat for the second quesadilla (or use a griddle to make them at the same time).
  9. Remove from heat and let sit for 2 minutes, then slice and serve with strawberry sauce.

  1. Allow them to cool: After preparing your cheesecakeadillas, let them cool down to room temperature.
  2. Wrap individually: To prevent sticking and maintain freshness, wrap each cheesecakeadilla in plastic wrap or aluminum foil. You can also place a piece of wax or parchment paper between each one if you prefer to stack them together.

Label the bag or container with the date and contents, and store them in the freezer for up to 2-3 months. To enjoy, simply defrost in the refrigerator and serve chilled.
