How to make Strawberry Cheesecake Quesadillas

  1. Add the softened cream cheese, sugar and vanilla to a mixing bowl and beat together until smooth.
  2. Dice strawberries and add them to the bowl, gently fold them in until combined.
  3. Spread half of the strawberry cream cheese mixture on a tortilla.
  4. Next, add 1 teaspoon of butter to a pan and heat to medium high. When the butter is melted, lay the tortilla in the pan, cream cheese side up.
  5. Spread 1 additional tsp of butter on the second tortilla and lay on top of the cream cheese, butter side.
  6. Cook both sides for 2-3 minutes each or until crispy.
  7. Mix together the cinnamon and sugar and sprinkle on top of the finished cheesecakeadilla.
  8. Repeat for the second quesadilla (or use a griddle to make them at the same time).
  9. Remove from heat and let sit for 2 minutes, then slice and serve with strawberry sauce.

Storage and Reheating Notes

  1. Allow them to cool: After preparing your cheesecakeadillas, let them cool down to room temperature.
  2. Wrap individually: To prevent sticking and maintain freshness, wrap each cheesecakeadilla in plastic wrap or aluminum foil. You can also place a piece of wax or parchment paper between each one if you prefer to stack them together.
  3. Choose the right container: Use an airtight container or a resealable plastic bag to store the wrapped cheesecakeadillas. This will help prevent moisture loss and keep them fresh.

IN THE FRIDGE: Since cheesecakeadillas contain dairy products, it’s important to store them in the refrigerator. This will help maintain their quality and prevent spoilage. Place the container or bag in the refrigerator, where they should last for up to 3-4 days.

IN THE FREEZER: If you want to store your cheesecakeadillas for an extended period, consider freezing them. Make sure they are wrapped tightly in plastic wrap or aluminum foil, and place them in a freezer-safe container or a resealable plastic freezer bag. Label the bag or container with the date and contents, and store them in the freezer for up to 2-3 months. To enjoy, simply defrost in the refrigerator and serve chilled.

Helpful Tips & Substitutions

If you’re looking to switch up the ingredients or try a different twist on the strawberry cheesecakeadilla recipe, consider the following substitutions or variations:

  1. Fruit substitutions: Swap out the strawberries for other fruits like raspberries, blueberries, blackberries, or sliced peaches. You can also try a mix of fruits for a more colorful and diverse flavor profile.
  2. Chocolate-hazelnut spread: Replace the cheesecake filling with a chocolate-hazelnut spread, like Nutella, for a rich and indulgent twist.
  3. S’mores variation: Instead of a cheesecake filling, use marshmallow fluff, chocolate chips, and crushed graham crackers for a s’mores-inspired cheesecakeadilla.
