Chocolate Banana Bread

Ingredients

  • 1 cup Flour
  • ½ cup Unsweetened Cocoa Powder
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • ½ teaspoon Salt
  • 3 Bananas very ripe, mashed
  • ½ cup Salted Butter melted
  • ½ cup Brown Sugar
  • ½ cup Sugar
  • 1 teaspoon Vanilla Extract
  • 2 eggs
  • 1 ½ cup Semi Sweet Chocolate Chips divided
  • ½ cup Pecans chopped

Instructions

  • Preheat the oven to 350 degrees.
  • Generously grease and flour a 9X5 loaf pan.
  • Mix the first five ingredients with a whisk, in a medium mixing bowl: flour, cocoa, baking soda, baking powder, and salt. Set this aside.
  • In a large mixing bowl, mix the mashed bananas, melted butter, brown sugar, white sugar, vanilla and eggs.
  • Add the flour mixture to the banana mixture. Stir just until combined - do not overmix.
  • Stir in 1 cup chocolate chips and walnuts.
  • Scrape this batter into the loaf pan.
  • Sprinkle remaining chocolate chips on top.
  • Bake for 55 minutes. Check for doneness by inserting a toothpick. If batter sticks to the toothpick, bake for 5 minutes at a time until fully cooked. If the loaf seems to be burning on the top but is not fully cooked, cover it with tin foil.
