Add the Flour, Milk & Cheese: Sprinkle the flour into the pan, stirring constantly to create a roux. Cook for about 1-2 minutes. Gradually add the half and half, whisking continuously to prevent lumps. Cook the mixture until it thickens, about 5-7 minutes. Stir in the grated Parmesan cheese until melted and smooth. Remove from heat and set aside.
Prepare the Dough: Preheat your oven to 475°F (245°C). Roll out the pizza doughs on a lightly floured surface to your desired thickness and shape. Transfer the dough to a pizza stone or a baking sheet lined with parchment paper.
Assemble the Pizzas: Spread the prepared white sauce evenly over both the pizza doughs, leaving a small border around the edges. Sprinkle the shredded mozzarella cheese over the white sauce. Evenly distribute the dill pickles and crumbled bacon over the cheese. (this recipe is enough to make two pizzas)
Bake the Pizzas: Bake in the preheated oven for 10-15 minutes, or until the crust is golden and the cheese is bubbly and melted.
Garnish and Serve: Remove the pizza from the oven and let it cool for a few minutes. Garnish with additional fresh dill. Slice and serve hot.
