Pickle Bacon Pizza

If you’re a pizza lover like me, always on the hunt for new and exciting flavors, then buckle up because this Pickle Bacon Pizza is about to become your new favorite obsession. Yes, you read that right—pickles and bacon on a pizza! Trust me, it’s a combination that’s both surprising and absolutely delicious.

Ingredients:

Prep Time:  15 minutes | Total Time:  30 minutes | Servings: 6

  • 2 tablespoons Olive Oil
  • 3 tablespoons Minced Garlic
  • 1 teaspoon Italian Seasoning
  • ¼ teaspoon Pepper
  • ½ teaspoon Salt
  • 2-3 tablespoons flour
  • 1 ½ cups Half and Half
  • ½ cup Grated Parmesan
  • 1 lb Raw Pizza Dough, two round pizza dough, I use Great Value brand
  • 2 cups Mozzarella cheese, shredded
  • 1/2 cup Dill pickles, chips or sliced, patted dry
  • 1 cup Bacon, cooked and crumbled
  • Additional fresh dill, for garnish

Instructions:

  1. Prepare the White Sauce: In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute. Stir in the Italian seasoning, pepper, and salt. 
  2. Add the Flour, Milk & Cheese: Sprinkle the flour into the pan, stirring constantly to create a roux. Cook for about 1-2 minutes. Gradually add the half and half, whisking continuously to prevent lumps. Cook the mixture until it thickens, about 5-7 minutes. Stir in the grated Parmesan cheese until melted and smooth. Remove from heat and set aside.
  3. Prepare the Dough: Preheat your oven to 475°F (245°C). Roll out the pizza doughs on a lightly floured surface to your desired thickness and shape. Transfer the dough to a pizza stone or a baking sheet lined with parchment paper.
  4. Assemble the Pizzas: Spread the prepared white sauce evenly over both the pizza doughs, leaving a small border around the edges. Sprinkle the shredded mozzarella cheese over the white sauce. Evenly distribute the dill pickles and crumbled bacon over the cheese. (this recipe is enough to make two pizzas)
  5. Bake the Pizzas: Bake in the preheated oven for 10-15 minutes, or until the crust is golden and the cheese is bubbly and melted.6. Garnish and Serve: Remove the pizza from the oven and let it cool for a few minutes. Garnish with additional fresh dill. Slice and serve hot.

Storage and Reheating Instructions:

Store leftovers in an airtight container in the refrigerator for up to 3 days or in the freezer for up to 2 months. You can also freeze the assembled but unbaked pizzas. Just wrap them tightly in plastic wrap and then in aluminum foil. They can be stored in the freezer for up to 2 months.

To reheat, preheat your oven to 375°F (190°C) and bake the slices on a baking sheet for about 10 minutes, or until heated through. You can also reheat in the microwave, but the crust might not stay as crispy.

Can This Be Made Ahead of Time?

Yes, you can make the white sauce and cook the bacon ahead of time. Store them separately in the refrigerator until you’re ready to assemble the pizzas. You can also roll out the pizza dough and keep it covered in the fridge for up to a day. This way, when you’re ready to make the pizza, most of the prep work is already done!

Substitutions & Variations

  • Cheese: Try using a different cheese like cheddar or gouda for a different flavor profile.
  • Pickles: Experiment with different types of pickles, such as bread and butter pickles or spicy pickles, for a unique twist.
