Coarsely chop pickles on a cutting board. Set aside.
In a medium-sized mixing bowl, use a hand mixer or wooden spoon to beat the softened cream cheese until it becomes smooth and creamy. If you're using a hand mixer, start on low speed to prevent splattering and then increase to medium speed once the cream cheese softens.
Add the sour cream into the cream cheese mixture and beat until well incorporated.
Next add the chopped dill pickles, shredded cheese, garlic powder, dill and salt & pepper to your liking and beat together until fully incorporated.
Give the dip a quick taste test. If you feel it needs more seasoning, you can add a touch more garlic powder, dill or salt & pepper to your preference.
Transfer the dip to a serving bowl and cover it with plastic wrap or a lid. Place the bowl in the refrigerator for at least 1 hour to allow the flavors to meld together. This will also help the dip thicken slightly.
Once the dip is chilled, serve it with your choice of crackers, chips, pretzels, or fresh veggies. Enjoy!
