Ingredients

  • 1 8-ounce package Cream Cheese, softened
  • 1/3 cup Sour Cream
  • 1 1/2 cups Dill Pickles coarsely chopped
  • 1 1/2 cups Colby Jack Cheese shredded
  • 1 tablespoon Garlic Powder
  • 1/2 tablespoon Fresh Dill chopped
  • Salt & Pepper to taste

Instructions

  • Coarsely chop pickles on a cutting board. Set aside.
  • In a medium-sized mixing bowl, use a hand mixer or wooden spoon to beat the softened cream cheese until it becomes smooth and creamy. If you're using a hand mixer, start on low speed to prevent splattering and then increase to medium speed once the cream cheese softens.
  • Add the sour cream into the cream cheese mixture and beat until well incorporated.
  • Next add the chopped dill pickles, shredded cheese, garlic powder, dill and salt & pepper to your liking and beat together until fully incorporated.
  • Give the dip a quick taste test. If you feel it needs more seasoning, you can add a touch more garlic powder, dill or salt & pepper to your preference.
  • Transfer the dip to a serving bowl and cover it with plastic wrap or a lid. Place the bowl in the refrigerator for at least 1 hour to allow the flavors to meld together. This will also help the dip thicken slightly.
  • Once the dip is chilled, serve it with your choice of crackers, chips, pretzels, or fresh veggies. Enjoy!
