Ingredients

  • 1 Flour Tortilla Large
  • 3 eggs
  • ¼ cup Cottage Cheese
  • Salt & Pepper to taste
  • ½ cup Shredded Cheese
  • 1 cup Diced Ham
  • ½ cup Tomatoes diced
  • ¼ cup Feta Cheese
  • ¼ cup Green Onions chopped

Instructions

  • Preheat Oven: Preheat your oven to 375°F.
  • Prepare the Tortilla: Place the flour tortilla in a greased 9-inch pie dish or cast iron skillet, pressing it gently into the dish so it covers the bottom and sides.
  • Make the Egg Mixture: Crack the eggs directly into the tortilla shell, whisk together the eggs and cottage cheese until well combined. Season with salt and pepper to taste.
