Tortilla Egg Bake

Ingredients:

Prep Time:  5 minutes | Total Time:  25 minutes | Servings: 1

  • 1 Flour Tortilla, Large
  • 3 eggs
  • ¼ cup Cottage Cheese
  • Salt & Pepper, to taste
  • ½ cup Shredded Cheese
  • 1 cup Diced Ham
  • ½ cup Tomatoes, diced
  • ¼ cup Feta Cheese
  • ¼ cup Green Onions, chopped

Instructions:

  1. Preheat Oven: Preheat your oven to 375°F.
  2. Prepare the Tortilla: Place the flour tortilla in a greased 9-inch pie dish or cast iron skillet, pressing it gently into the dish so it covers the bottom and sides.
  3. Make the Egg Mixture: Crack the eggs directly into the tortilla shell, whisk together the eggs and cottage cheese until well combined. Season with salt and pepper to taste.
  4. Add Toppings: Sprinkle the shredded cheese evenly over the egg mixture. Add the diced ham, spreading it evenly. Add the diced tomatoes over the ham layer. Sprinkle the feta cheese on top.
  5. Top with Green Onions: Sprinkle the chopped green onions on top.
  6. Bake: Place the dish in the preheated oven and bake for 25-30 minutes, or until the eggs are set (not jiggly) and the top is golden brown.
  7. Serve: Remove from the oven and let it cool for a few minutes before slicing. Serve warm and enjoy!
