COLORFUL
Hey there, party people! If you’re looking for a fun, tropical treat to serve at your next gathering, you’ve come to the right place. Today, we’re diving into the world of Boozy Pineapple Spears. This delightful, easy-to-make recipe is perfect for anyone who loves a good cocktail but wants to enjoy it in a new, refreshing way.
Ingredients:
Prep Time: 5 minutes | Total Time: 24 Hours | Servings: 6
- 2 cups Rum, I use Malibu Caribbean Rum
- 42 oz Coconut Water Pineapple Spears, Member’s Mark Brand from Sam’s Club
- 2 Pineapple Crush Drink Mix Packets, 2 packets
Instructions:
- Open the jar of pineapple spears and pour out about 1 ½ cups of the coconut flavored pineapple juice into a large measuring cup. (The juice remaining in the jar will be right below the navy blue label.)
- Pour the rum directly into the jar and fill to the top, about 2 cups total.
- Next add two packets of Pineapple Crush Drink Mix packets into the jar.
- Close the lid tightly and shake all the ingredients together until well combined.
- Place the jar in the refrigerator for 24 hours or at least overnight to allow the liquid to thicken and the pineapples to soak up the rum.
- Enjoy cold! *Save the coconut infused syrup that you poured out from the jar in step one. Later strain the pineapples from the jar after chilling, reserving the liquid, then combine the two together and blend with ice to make a pina colada with all the leftover liquids!
Storage and Reheating Instructions:
The best way to store your Boozy Pineapple Spears is to keep them in the refrigerator in an airtight container. They’ll stay fresh for up to a week. To freeze them, place the spears in a freezer-safe container or bag, making sure they’re not touching each other to prevent sticking. When you’re ready for them simply thaw in the refrigerator overnight. They might be a bit softer than fresh ones, but they’ll still be packed with flavor.
Helpful Tips & Substitutions
Can This Be Made Ahead of Time?
Absolutely! This recipe is perfect for making ahead of time. In fact, it’s even better when you do. The longer those pineapple spears soak in the rum, the more flavorful they become. So feel free to make a batch a couple of days before your event. Just store them in the fridge and let them marinate until you’re ready to serve.
Substitutions & Variations
- Different Rum Flavors: Try using different flavored rums like coconut, mango, or pineapple to give your spears a unique twist.
- Alcohol-Free Version: If you want to make a non-alcoholic version, simply replace the rum with coconut water or a flavored soda.
- Spicy Kick: Add a few slices of jalapeño to the jar for a spicy, tropical treat.
Helpful Cooking Notes
- Shake It Well: Make sure you shake the jar really well to combine all the ingredients. You want that drink mix to dissolve completely.
- Quality Matters: Use good quality rum and pineapple spears. It makes a difference in the final taste.
- Label Level: Pour out the juice until it’s just below the navy blue label on the jar. This is your marker for how much rum to add.
- Leftover Liquid: Don’t forget to save the coconut-infused syrup! It’s fantastic for making pina coladas or even just as a tropical mixer for other cocktails.
