Instructions:

  1. Prepare the Pan: Grease a 9×13-inch baking pan with butter or non-stick cooking spray.
  2. Melt Butter and Marshmallows: In a large pot, melt the butter over medium heat. Add 7 cups of mini marshmallows to the melted butter and stir continuously until fully melted and smooth.
  3. Add Vanilla Extract: Remove the pot from heat and stir in the vanilla extract.
  4. Combine with Golden Grahams: Add and gently fold in the Golden Grahams cereal until evenly coated with the marshmallow mixture. Toss in 1 cup of the reserved mini marshmallow and mix in.
  5. Press into Pan: Transfer the mixture to the prepared baking pan. Press down gently with a spatula to spread it evenly. Be careful not to press too hard, as you want to keep the mixture light and airy.
  6. Add Remaining Marshmallows and Hershey’s Bars: Evenly spread the remaining 1 cup of mini marshmallows and Hershey Bars pieces all over the top of the golden grahams.
  7. Cool and Set: Allow the bars to cool at room temperature for about 1 hour, or until set. For quicker setting, you can place the pan in the refrigerator for about 20-30 minutes.
  8. Cut and Serve: Once set, cut the mixture into bars of your desired size.

Storage and Reheating Instructions:

Keep your Golden Grahams S’mores Bars in an airtight container at room temperature. They’ll stay fresh and delicious for up to 3 days or you can refrigerate them for up to a week. If you want to freeze them, cut the bars into individual servings then wrap each bar tightly in plastic wrap. Place the wrapped bars in a freezer-safe bag or container.

If you prefer your bars warm and melty, pop them in the microwave for about 10-15 seconds. This will make the marshmallows gooey again and melt the chocolate just a bit – yum!

Helpful Tips & Substitutions

Can This Be Made Ahead of Time?

Definitely! These bars are perfect for making ahead of time. You can make these bars up to a week in advance. Just store them in an airtight container at room temperature or in the refrigerator, depending on how far ahead you’re making them.

Substitutions & Variations

  • Chocolate Chips Instead of Hershey’s Bars: If you don’t have Hershey’s Bars on hand, chocolate chips work just as well. You can use milk chocolate, dark chocolate, or even white chocolate chips for a different twist.
  • Add Peanut Butter: Mix a couple of tablespoons of peanut butter into the melted marshmallow mixture for a peanut butter s’mores bar.
  • Extra Add-Ins: Feel free to toss in some extra goodies like chopped nuts, toffee bits, or even a handful of coconut flakes. The possibilities are endless!

Helpful Cooking Notes

  • Low and Slow: When melting the marshmallows and butter, keep the heat at medium. Melting them slowly ensures a smooth mixture without burning.
  • Gently Fold: When mixing the cereal into the marshmallow mixture, be gentle. You want to keep the cereal pieces intact for a better texture.
  • Don’t Overpress: When pressing the mixture into the pan, don’t press too hard. Keeping it light and airy will result in a better final product.
