Helpful Tips & Substitutions

Can This Be Made Ahead of Time?

Yes! Assemble the casserole as instructed, cover it with foil, and store it in the refrigerator for up to 24 hours before baking.

Substitutions & Variations

  • Rice: Swap white rice for brown rice or wild rice for a nuttier flavor and added nutrients. Note that different rice types may require slightly different cooking times and liquid amounts.
  • Chicken: Use boneless, skinless chicken thighs instead of breasts for a richer flavor.
  • Pineapple: If you prefer fresh pineapple, you can use that instead of canned. Just make sure to add some pineapple juice to the dish to maintain the right moisture level.
  • For a spicier kick, add some chopped jalapeños or a dash of red pepper flakes.

Helpful Cooking Notes

  • Rice Texture: If you prefer your rice to be a bit firmer, reduce the amount of chicken broth slightly. If you like it softer, you can add a bit more.
  • Cover Tightly: When covering the dish with foil, make sure it’s sealed tightly to trap the steam. This will help cook the rice and chicken evenly and prevent the casserole from drying out.
  • Rest Time: After baking, let the casserole sit for about 5 minutes before serving. This allows the flavors to settle and makes it easier to serve.
