HOW TO MAKE RITZ CRACKER CHICKEN CASSEROLE IN AN OVEN
- Preheat your oven to 350°F.
- In a large mixing bowl, mix together the shredded chicken, sour cream, cream of chicken soup, frozen mixed veggies, parmesan cheese, pepper, and onion powder. Mix until thoroughly combined.
- Transfer the poppy seed casserole mixture to a greased 9×13-inch casserole dish and smooth out the top.
- Crush two sleeves of Ritz crackers over the casserole in an even layer, then pour the melted butter evenly over top of the cracker topping.
- Bake the casserole for 30-35 minutes, or until it is hot and bubbly.
- Allow the casserole to cool for a few minutes before serving. Serve as is or over a bed of rice alongside a garden salad.
STORAGE AND REHEATING NOTES:
Store leftovers in an airtight container in the fridge for up to 4 days. To reheat, place the leftovers in a small microwave dish and warm in 30-40 second increments until fully heated through.
If you have an Air Fryer, you can put the leftover casserole in an oven safe baking dish that fits in your basket and cook for 5-7 minutes at 350 degrees until warmed through. This is a great way to make cracker topping crispy again!
You can actually make this recipe ahead of time too! Just mix all the casserole ingredients together and pour them into your baking dish the night before, cover and refrigerate. Take out and add the cracker topping when you’re ready to bake! If you aren’t a fan of frozen mixed veggies, feel free to leave them out and maybe serve with a side salad or broccoli!

What Can I Use Instead of Cream of Chicken Soup?
If you don’t have cream of chicken soup, you can use cream of mushroom soup or cream of celery soup instead.
What Other Veggies Can I Add to the Casserole?
I’ve used some mixed veggies that I had lying in my refrigerator, and you can totally do that too. You can add almost any of your favorite veggies into this versatile casserole- carrots, broccoli, bell pepper, onion, zucchini, sweet potatoes, parsnip, garbanzo beans are all great choices.
How Do I Serve the Ritz Cracker Chicken Casserole?
Any fresh salad with crunchy raw veggies can be a great side dish to pair with this Ritz cracker chicken casserole. Pan fried and sauteed veggies can be amazing too!
