Tater Tot Breakfast Casserole

If you’re looking for the ultimate breakfast dish that combines comfort, flavor, and ease, look no further than the classic Tater Tot Breakfast Casserole. It will make everyone at the table happy! Whether you’re making it for a lazy weekend brunch, a big family gathering, or just meal prepping for the week, this casserole ticks all the boxes.

Ingredients:

Prep Time:  15 minutes | Total Time:  75 minutes | Servings: 8

  • 1 Tablespoon Butter, softened
  • 2 pounds of Breakfast Sausage
  • 1 Medium Onion, finely diced
  • 1- 30 ounce bag of Frozen Tater Tots
  • 6 Large Eggs
  • 1 cup Milk
  • 1 cup Heavy Cream
  • 2 teaspoons Seasoning Salt
  • 1 teaspoon Pepper
  • 1 teaspoon Garlic Powder
  • 1 cup Sharp Cheddar Cheese, shredded
  • 1 cup Colby Jack Cheese, shredded
  • 1 cup Mozzarella Cheese, shredded,  divided in half

Instructions:

  1. Preheat the oven to 375 degrees.
  2. Rub the butter all over the bottom and up the sides of a 9X13 inch baking dish.  
  3. Fry the sausage and onion together in a large skillet. This will take about 10 minutes, make sure there are no traces of pink left in the meat.
  4. In a large bowl, mix tater tots, sausage, and onion.
  5. In a separate bowl, beat eggs slightly, add milk, half and half, seasoning salt, pepper, garlic, cheddar cheese, pepper jack cheese, and half of the mozzarella cheese.  
  6. Add this mixture to the tater tot and sausage mixture.  
  7. Pour all of this into the buttered 9X13 inch baking dish. 
  8. Bake for 45 minutes covered with tin foil, then remove foil and add the remaining mozzarella cheese.
  9. Bake for another 15 minutes uncovered.

Storage and Reheating Instructions:

You can store any leftovers in the fridge for up to 4 days. Make sure to cover the dish tightly with plastic wrap or transfer individual servings to an airtight container. You can also freeze it for up to 3 months.

To maintain that crispy tater tot texture, I recommend reheating in the oven. Preheat the oven to 350°F, cover the casserole with foil (to prevent over-browning), and heat for about 20-25 minutes or until warmed through. If you’re in a rush, you can absolutely nuke a slice in the microwave. Pop it in for about 2 minutes.

Can This Be Made Ahead of Time?

Oh yes, it can! Follow the recipe as usual but stop before baking. Cover the unbaked casserole with plastic wrap and refrigerate overnight. When you’re ready to bake, remove the plastic wrap, cover with foil, and bake as directed.

  • Meat Swap: Don’t have sausage on hand? Try swapping in bacon, ham, or even chorizo for a spicy twist.
  • Vegetarian Option: You can easily make this dish vegetarian by omitting the sausage and adding in your favorite veggies like bell peppers, mushrooms, or spinach. Sauté them first to get rid of excess moisture before adding them to the casserole.
