How to Make Thanksgiving Leftover Egg Rolls

  1. Warm the Filling Ingredients: Slightly warm all the leftover ingredients in the microwave so they are not cold going into the egg roll wrapper to be fried.
  2. Assemble the Egg Rolls: Lay out an egg roll wrapper on a clean surface. Place about 1 tablespoon shredded turkey in the center of the wrapper, then ½ tablespoon of stuffing and ½ a tablespoon of mashed potatoes layered on top. Add a small spoonful of cranberry sauce.
  3. Roll the Egg Rolls: Fold the outside corners in towards the center over the filling, then fold the bottom piece in underneath the filling and roll tightly, sealing the final corner with a bit of water to keep the roll closed.
  4. Fry the Egg Rolls: Heat vegetable oil in a deep skillet or fryer to 375°F. Fry the egg rolls in batches, turning occasionally, until they are golden brown and crispy, about 3-4 minutes. Drain on paper towels.
  5. Serve: Serve the egg rolls hot with gravy or more cranberry sauce for dipping.
