EASY PEASY SLOW COOKER STEAK FAJITAS
It’s a myth that making homemade steak fajitas has to be stressful! In fact, this simple fajitas recipe will show you that cooking fajitas are really simple to do! Skip the high price tag that restaurants charge and make your belly (and wallet!) happy by eating this delicious dish at home. This is a great recipe for busy weeknights that takes just a few minutes of prep work!

- Sharp knife

HOW TO MAKE CROCK POT STEAK FAJITAS
1. Add the steak to the slow cooker. Put the flank steak into the slow cooker and add the rotel, garlic, onion, and fajita seasoning. If you want to mix, give everything a quick stir.
2. Program the slow cooker. For a quicker dinner, you can turn the crock pot to high and cook for four hours. For a slower cook, put the slow cooker to the low setting and cook for eight hours. During the last hour, add in the sliced peppers and toss with the extra liquid and spices. (This would be done at hour three if cooking on high and hour seven if cooking on low.)
3. Cut the steak. Once the cooking time is complete, take the meat out of the crockpot and shred it. The meat should be incredibly tender and shred easily. Put the meat back into the crock pot and stir with the sliced bell peppers. (If the meat isn’t tender, put it back into the crockpot and cook for 30 more minutes up to an hour to help it tenderize.)
4. Serve. Use tongs and serve the shredded steak and veggies. (a slotted spoon works great, too!) Make sure to remove any liquid before adding to the tortilla. Add optional toppings and enjoy!
HELPFUL TIPS & TRICKS
- Having guests over for dinner? Double this recipe just to be on the safe side! Even doubling the ingredients will still fit in the crock pot. Easy dinner recipes are the perfect way to feed a crowd!
- Not a fan of shredded steak fajitas? No worries – we get it! You can make sliced beef fajitas as well. Instead of shredding, just slice the steak into strips. (Make sure you cut against the grain so it’s nice and tender.)
SUBSTITUTIONS AND VARIATIONS
- Change up the type of tortilla – Flour tortillas are soft and delicious but corn tortillas are gluten-free. Both work great so mix and match as often as you please. Use tortillas of your choice and enjoy.
- Can I use taco seasoning in place of fajita seasoning? Yes, you can. Just add a packet of taco seasoning to the slow cooker instead. Pay attention to the ingredients in the taco seasoning as most times it has a higher amount of chili powder which will increase the level of spiciness.
- Add fresh jalapenos – If you’re a fan of heat, chopping up some jalapenos and adding them to the fajita mixture is NEVER a bad idea.
- Love citrus flavor? Squeeze some fresh lime juice over the top of your slow cooker beef fajitas!
- Turn this into a delicious low-carb recipe – Instead of making this fajita recipe using tortillas, cut the carbs and put the crock-pot steak fajita mixture on a bed of cauliflower rice. Fajita bowls are a healthy recipe with so much flavor!
STORAGE NOTES
The leftover steak fajitas should be stored in an airtight container in the fridge for up to 3 days. Make sure that you let the mixture cool before storing it. To freeze the fajita mixture, add to a freezer bag and store in the freezer for up to 2 months. (Fajitas are so good the next day!)

What is a substitute for fajita seasoning?
No worries, you can make your own! Combine 2 teaspoons chili powder, 2 teaspoons cumin, ½ teaspoon garlic powder, ½ teaspoon onion powder, ½ teaspoon salt, ¼ teaspoon sugar, and ¼ teaspoon cayenne pepper. Give it a good stir and add to the crock pot.
What can I use instead of Rotel?
Adding in 1 cup of diced tomatoes and 1/4 cup of chilies works perfectly fine, too. I’ve also used 1 cup of my favorite salsa before, and that was delicious.
What’s another steak option that can be used to make fajitas?
Flank steak is going to be the best option, but another good one is skirt steak. If you’re going to be slicing the steak instead of shredding it, flat iron steak in thin slices would be well too.
Are these fajitas spicy?
They’re not – but you can make them hot! Add some chili powder or red chili flakes to kick up the heat. I always recommend doing this to your portion so that it doesn’t affect the entire meal for others that don’t like to live on the wild side.
What toppings go well on this slow cooker steak fajitas recipe?
Sour cream, shredded cheese, and other fresh ingredients like lettuce or diced jalapeno pepper would taste great!
