Grinch Guacamole Ingredients

  • Ripe Avocados
  • Red Onion
  • Fresh Cilantro
  • Lime
  • Garlic Clove
  • Salt and Pepper to taste

  • Yellow Bell Pepper
  • Bag of Chips (Holiday Red & Green, and Corn Tortilla)

How to Make Grinch Guacamole

  • Prep Time:  25 minutes

  1. Prepare the Avocados: Cut the avocados in half, remove the pit, and scoop out the flesh into a medium-sized bowl.
  2. Mash the Avocados: Using a fork or potato masher, mash the avocados to your desired consistency (smooth or chunky).
  3. Add Fresh Ingredients: Add the chopped red onion (or onion powder), diced tomatoes, minced garlic and chopped cilantro to the mashed avocados. 
  4. Season: Squeeze the lime juice over the mixture. Add salt and pepper to taste. Gently mix everything together.
  5. Taste and Adjust: Taste your guacamole and adjust any ingredients as needed. You might want a bit more lime juice, salt, or even jalapeño depending on your spice preference.
  6. Make the Grinch: Dollop the guacamole onto a platter in the general shape of the Grinch’s head and hat. Use an offset spatula to shape and smooth it out and a damp napkin to clean up the sides. 
  7. Make the Clothes: Next, layer the diced tomatoes on top of the hat portion of the guacamole. Place the cauliflower florets on the rim of this hat and make the snowball on top. 
  8. Make the Facial Details: Finally, make the grinch’s face by cutting a bell pepper into two half circles and placing them on to make the eyes. Next, open the can of chopped olives, drain them, then lay them out in thin lines to make the Grinch’s eyelashes, mouth, and nose. Then place 2 sliced olives on top of the bell pepper eyes to make pupils.
  9. Add Snacks: Once the Grinch Guacamole shape is finished, add your favorite chips and veggies to the platter and serve! I used red tortilla chips to mimic the Grinch’s Santa Coat and then added corn tortilla chips around his face but you can use whatever colors or foods your heart desires! 
  10. IMPORTANT NOTE! I used these kitchen tweezers to help me place the chopped olives on to create all the lines on the Grinch’s face…I highly recommend getting a pair of these if you do a lot of holiday cooking and baking, they are SUPER helpful! Also, depending on where you live, different types of tomatoes can be more red than others…Roma is pretty red where I live in December but you might try cherry or grape tomatoes or even a beef steak variety depending on what’s more in season in your area!

How to Store Grinch Guacamole:

If you have leftovers, store them in an airtight container in the refrigerator. Be sure to press plastic wrap directly onto the surface of the guacamole to minimize oxidation and maintain that vibrant green color. For optimal taste and texture, consume refrigerated guacamole within 1-2 days.

Helpful Tips & Substitutions

Can This Be Frozen?

Unfortunately, guacamole and freezers are not the best of friends. Avocado has a high water content, and freezing tends to alter its texture, leaving you with a less-than-appealing dip. For the best experience, savor your Grinch Guacamole fresh and avoid the chilly depths of the freezer.

Can This Be Made Ahead of Time?

Guacamole is at its prime when fresh so I recommend making this right before serving. But I understand needing to prepare this in advance for parties, I would only make it the evening before, not DAYS in advance. You have two options… First, you can make the guacamole the day before and have it ready to shape the whole board closer to serving it. If you use this method I recommend putting the guacamole in a bowl and adding a thin layer of water right on top of the guac then sealing it tightly with a lid. When you are ready to make the board, just remove the lid and pour out the water, then scrape off the thin top layer of the guac and discard. Second, you can make the entire platter and wrap tightly in plastic wrap, making sure not to squash the guac and make a mess of the face. It should be fine the next morning and not have browned much because of the lime fresh juice in the recipe.
