I’ve got a recipe that’s going to change your life—or at least your dinner plans! If you’re anything like me, you love a hearty, comforting meal but don’t always have the time, or energy! Enter Lazy Lasagna. It’s everything you love about lasagna, but way easier to make.
Ingredients:
Prep Time: 20 minutes | Total Time: 1 hour and 20 minutes | Servings: 8
- 1 tbsp Olive Oil
- 1 White Onion, chopped
- 1 tbsp Minced Garlic
- 1 lb Ground Beef
- 24 oz Spaghetti Sauce
- 1 tsp Italian Seasoning
- Salt, to taste
- Pepper, to taste
- 25 oz Bag Frozen Cheese Ravioli, thawed
- 2 cups Mozzarella Cheese, shredded
- 1/4 cup Parmesan Cheese
- Fresh Chopped Parsley, fro serving
Instructions:
- Preheat the Oven: Preheat your oven to 375°F (190°C).
- Cook the Beef Mixture: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute, until fragrant. Add the ground beef to the skillet. Cook until browned, breaking it up with a spoon as it cooks. Drain any excess fat from the skillet.
- Prepare the Sauce: Add the spaghetti sauce to the cooked beef mixture. Stir in the Italian seasoning, salt, and pepper. Let the sauce simmer on low heat for about 5 minutes.
- Assemble the Lasagna: In a 9×13 inch baking dish, spread a thin layer of the meat sauce on the bottom. Arrange a single layer of thawed cheese ravioli over the sauce. Evenly sprinkle on half of the mozzarella and parmesan cheese. Spread half of the remaining meat sauce over the ravioli. Add another layer of cheese ravioli. Spread the remaining meat sauce over the ravioli. Sprinkle the remaining 1 cup of mozzarella cheese over the top. Finally, sprinkle the Parmesan cheese evenly over the mozzarella.
- Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes. After 30 minutes, remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
- Serve: Remove the lasagna from the oven and let it sit for about 10 minutes before serving.
Storage and Reheating Instructions:
Store your Lazy Lasagna in an airtight container in the fridge for up to 3 days. This lasagna is also freezer-friendly. Once your lasagna has cooled, wrap it tightly in plastic wrap and then in aluminum foil. It can be frozen for up to 3 months.
To reheat, you can heat in the microwave for a couple of minutes until hot. If you prefer the oven, cover the dish with foil and bake at 350°F (175°C) until heated through, about 20-25 minutes.
Helpful Tips & Substitutions
Can This Be Made Ahead of Time?
Yes! Assemble the lasagna as instructed but don’t bake it. Instead, cover it with plastic wrap and refrigerate for up to 24 hours. When you’re ready to bake, remove the plastic wrap and cover with aluminum foil. Bake as directed, adding an extra 10 minutes to the initial covered baking time.
Substitutions & Variations
- Vegetarian Version: Skip the ground beef and use a mix of sautéed mushrooms, spinach, and bell peppers.
- Different Protein: Swap the ground beef for ground turkey or Italian sausage for a different flavor profile.
- Spicy Kick: Add some red pepper flakes to the sauce for a bit of heat.
- Different Cheese: Feel free to experiment with different cheeses. Ricotta can be added for a creamier texture, or use a sharp cheddar for a different flavor.
Helpful Cooking Notes
- Thawing Ravioli: Make sure your ravioli is fully thawed before assembling the lasagna. This ensures even cooking.
- Cheese Layers: For the best gooey, cheesy experience, don’t skimp on the cheese. The more, the merrier!
- Resting Time: Letting the lasagna rest after baking allows it to set and makes it easier to cut into nice, clean slices.
